You can replace the squash with celeriac.

The better the ingredients, the healthier and tastier the dish.

Peel and cut squash and carrots into small pieces.

Place in a cast-iron casserole or pressure cooker with coconut milk and stock (optional and homemade). Stir well.

Add curry powder, salt and pepper.

Cook, covered, until the squash pieces fall apart and you can poke a fork into the carrots.
Mix in a blender.
